1.Add ground goat, the egg yolk and a dash of salt and pepper into a bowl. Use your hands to mix the meat with the egg, salt and pepper.
2.When egg yolk, salt and pepper are mixed into the goat meat, separate the meat into four sections. Form each section into a burger shape.
3.Grab a sheet pan, and place the burgers onto the pan. Use your thumb to make an indention into the center of the burger, and add 1 teaspoon of butter or ghee into the indention.
4.Cover the sheet pan with foil, and place the sheet pan into the freezer for about 10 minutes.
5.While the burgers and butter/ghee are in the freezer, grab a large skillet. Add the remaining butter or ghee into the skillet. Place skillet onto stovetop, and turn burner to medium-high heat.
6.Once the butter or ghee has melted, grab the sheet pan out of the freezer. Place the burgers into the skillet, and allow the burgers to pan fry for about 5-10 minutes on each side. Add additional salt and pepper to the tops of the burgers as needed.
7.Once the burgers have throughly cooked, remove them from the skillet and place them onto a plate. Grab a spoon to scoop up dripping and butter/ghee from the skillet, and pour at least 1 heaping spoonful over each burger.
